Step 1
Open the bag of frozen chicken wings.
*Bags of frozen chicken wings vary in size so the recipe for the marinade is for 1# of chicken wings. So, if you have a 3# bag of wings you would just triple the recipe.
Into the bag of frozen chicken wings add, per pound, 1/4 cup vegetable oil, 1 tablespoon hot sauce, 1 teaspoon crushed garlic and 1 tablespoon lemon or lime juice. Seal the bag and toss, so that all of the chicken wings are evenly coated with the marinade.
Step 2
Place the bag of marinating chicken wings into a bowl, just in case there is any leaking. Put the bowl into the refrigerator and allow the chicken to thaw and marinate for 48 hours.
You can cut down on the marinating time but I find the flavor is not as full and it really does take 2 days for the chicken wings to thaw in the fridge. So let them sit and all the flavors to marry, you won't regret it.
Step 3
When the chicken wings are thawed remove the wings from the bag and place on a hot grill. As the wings are small I grill them using indirect heat, so they do not burn.
Turn the wings frequently so they cook evenly and thoroughly, no one wants underdone chicken.
In the last ten minutes baste the wings with a honey bar-b-que sauce, turn the chicken and then baste again. Allow the sauce to cook onto the chicken and your done.
I serve these chicken wings as is and do not use any dipping sauce as they are so tasty on their own.
