Step 1
Cut up beef in small 1 inch cubes if you can't get course chili grind beef from your butcher.
Step 2
In the bottom of the large pot, cook bacon to render out the fat. Add beef and brown. Remove meat as it browns as not to over cook. When you finish, remove excess fat from pot.
Step 3
While browning the meat caramelize the onions and peppers in large skillet until soft.
Step 4
Add the tomatoes, tomato paste, mole and the vegetables to the large pot. Stir and simmer for 10 minutes
Step 5
Add the beef broth and minced garlic.
Step 6
Add the spice packet.
10 T Cocoa Chili Powder?
5 T Ground Cumin
3 T Sweet Paprika?
2 T onion powder
10 T Kosher Salt?
6 T Garlic Powder
?5 t brown sugar
* 24 grams of Spice Ancho Chili Pepper blend ground to a powder
* 24 grams of Smokey Chipltle Pepper Blend? ground to a powder
Step 7
Stir well and bring to a boil.
Step 8
Turn down heat to a simmer and cover.
Cook for 90 minutes stirring occasionally.
Step 9
Adjust seasoning for taste and heat. You can add the Tobasco at this time.
Step 10
Add the chocolate and cook for about another 30 minutes uncovered.
