Step 1
Finely chop 3 garlic cloves and slice your green onions. Heat a heavy sauce pan and add your butter. Once the butter has melted add the garlic and onions and allow them to sweat.
Step 2
Take the peppercorns, cloves and allspice and place them in a sandwich bag and give them a crush. Add to the sauce pan once the onions and garlic have sweated, (Do not burn the garlic) and salt and pepper and allow to cook on med low heat until the spice become fragrant.
Step 3
Take the pan off of the stove and add the balsamic vinegar and keep your face away from the pan. Then the maple syrup and brown sugar and return to the heat. (You don't want to inhale the vinegar vapors, could hurt your eyes and nose)
Step 4
Allow to cook on low heat about 15 to 20 minutes. Then strain and remove as much the bits of spices. Then add the red pepper flakes and allow to thicken to the consistency of gravy, if it becomes too thick add a little more vinegar. Then allow to cool.
Step 5
Meanwhile prepare which ever meat you are wanting to eat, this sauce is great on pork spare ribs or skinless chicken, your choice. Grill the meat of your choice until completely cooked and the juices run clear.
Once your meat has been fully cooked slather on the bbq sauce as you would with any kind of bbq sauce and serve.
