Step 1
Place a 7 to 9 pound ham on the rack in a shallow roasting pan. Make cuts along the surface of the ham, making diamond shapes about 1/2 an inch deep. Bake, uncovered, at 325°F for 1-1/2 hours.
Step 2
While you ham is baking, in a saucepan, combine the remaining ingredients use a whisk to mix them together: 1-1/2 cups of champagne, 3/4 cup of brown sugar, 4-1/2 tsp of honey, 3/4 tsp of ground ginger, and 3/4 tsp of ground mustard. Bring the mixture to a boil; cook until glaze is reduced by half. Remove from the heat.
Step 3
After the first hour of the ham baking, baste ham with the glaze. Continue to bake the ham for another 30 minutes longer or until a meat thermometer reads 140°F, basting every 15 minutes with glaze. Let the ham stand for 10 minutes before slicing. Serve with the remaining glaze.
