Make Chicken Chip Cassarole

  • Step 1


    First, you need to cook your chicken breasts. Boiling them works best to keep the mean tender. I use salt and garlic in the water from the start to flavor. Once they're cooked, chop the meat finely so that the pieces are smaller than bite-sized.

    Next, add the sour cream and mayo in the cassarole dish. This helps grease the bottom before mixing these into the other ingredients.





  • Step 3


    Pour the chicken into the sour cream and mayo mixture. Mix thoroughly so that the wet mixture thoroughly coats the chicken pieces. If needed, add more sour cream, not mayo.





  • Step 4


    Pour in the rest of the ingredients, except for the cheese. Only add in about a half cup of cheese to the mix. Add a handful of crushed Ruffles chips. Mix thoroughly.





  • Step 5


    Smooth the mixture around within the cassarole dish. Pour the rest of the chips over the top, adding the rest of the cheese over the top of the chips.





  • Step 6


    Bake on 350 for about 15 minutes or until the cheese bubbles on top. Let stand for 5 minutes and serve. Garlic bread (especially Coles brand) goes great with it!
