Step 1
Cut each chicken breast into three strips. Dredge in flour that has been seasoned with salt & pepper. Next, dip chicken strips in egg and then into the bread crumbs.
Step 2

Preheat oven to 425 degrees. Line a baking sheet with aluminum foil. Place chicken tenders on the foil. Bake for 10 minutes. Turn chicken over and bake for an additional 10 minutes. Check to make certain the chicken is completely cooked. Remove from the oven.
Step 3

Cut the zucchini into bite size pieces. You can peel the zucchini or you can leave the peels on. Put 2 tablespoons of olive oil into a frying pan. Put the onions and zucchini into the pan and sauté until vegetables are softened and slightly browned. Season with salt and pepper. Serve with chicken fingers.
