Step 1
Cut the chicken into large dice.
Step 2
Now mix your batter. Combine the water, egg, and flour and whisk well. Then combine the first measurement of water and cornstarch. Then add this to your batter.

In a large wok heat 3 cups of canola oil on high heat. Once the oil is heated coat the chicken in the batter. Place in hot oil and cook for about 8 minutes or until the chicken is cooked all the way through.
Step 4
For the sweet and sour sauce combine the ketchup, sugar, rice wine vinegar, and juice from the can of pineapple chunks. Bring to a simmer. Combine the cornstarch and water and add to the sauce. Add the diced green onion and pineapple chunks. Let this simmer for ten minutes.
Step 5
In a large bowl toss the cooked chicken with the sweet and sour sauce. Serve the sweet and sour chicken over white or brown rice.
