Step 1
Prepare the vegetables. Dice 1/2 slice of the onions into roughly 1/2 inch slices. Crush a clove of garlic and remove the skin. Peel and dice the potatoes into 1/2 or 1/4 size cubes. If desired, chop 1/2 head of cabbage into approximately 2 inch long pieces. Width doesn't matter.
Step 2
Put the sauce pot on medium heat for 5 minutes. Pour 2 tablespoons of vegetable oil into the pot. Add the onions and garlic to the heated pot and sauté them for about 2 minutes.
Step 3
Add 2 cup of water. Put in the cut potatoes and optional cabbage and cook until slightly softened.
Step 4
Open the cans of corned beef and add the meat into the pot. Mix it well with all the other ingredients.
Step 5
Add the remaining cup of water and cook the Filipino Corned Beef Stew for an additional 10 minutes uncovered to allow some water to evaporate. It is all right to add some pepper but it is not necessary to add salt. There is enough salt in the corned beef itself.
Step 6
Turn off the heat and let it sit for about 5 minutes. Serve and enjoy.
Step 7
Substitute the potatoes with cooked elbow macaroni for the second variation. It will be just as tasty.
