Step 1
The first step is to fry bacon in skillet until crisp. Drain on paper towels.When cool break bacon apart. Remove drippings from pan leaving enough to sauté the onions in.
Step 2
cut the bunches of spring onions into 1/4 pieces and sauté in drippings. Break 4 eggs over the onions and scramble. Return the bacon to the pan and mix with eggs and onions. After mixing well, let cool for a bit (if you put in pie dough hot it will make dough too soft.
Step 3
Take the pie dough and cut into 4x4 squares. After mixture has cooled a bit spoon in enough onion mixture to fill dough squares. Press together the edges to keep mixture in. Do not over fill or they will "leak" when you cook them. In a large pot heat water to almost boiling temp. Drop dumplings in gently and cook for 8 minutes or until dough feels firm. After removing from water spoon a little of the reserved drippings over the dumplings. This is not a diet recipe as you see but they are sooo good every once in a while.
