Step 1
Cook rice until tender. Drain rice and set aside. Spray the bottom and sides of a medium-sized casserole dish with vegetable oil spray like Pam.
Step 2
In a frying pan, fry the bacon until it is nice and crisp.
While bacon is frying, cut green pepper into bite-size pieces. Do not use seeds of the pepper.
Step 3
Chop onion. Pour off most of the grease from the bacon and remove bacon to cutting board. Add onion and green pepper to frying pan. Sauté only until vegetables soften.
Step 4
Chop bacon into bite-size pieces. Put rice, green peppers, onions, bacon, salt, pepper, paprika and tomato sauce into a bowl and mix. Pour into greased casserole dish and bake covered in a 325 degree oven for 25 minutes.
