  • Step 1


    Prepare marinade by combining orange juice, lime juice, vinegar, olive oil, oregano, salt, pepper, garlic, chili powder, and chilies, whisk well until salt is dissolved. In a sauce pan, bring marinade just to a simmer, continue simmering till fragrant about 2-3 minutes. Remove from heat cover and allow to cool.





  • Step 2


    While marinade is cooling, prepare chicken, bone and skin, unless you bought boneless skinless. Pour 1/2 of the marinade into a zip lock bag, add chicken and pour remaining marinade over chicken and marinate in the refrigerator at least 2 hours, 4 to 12 is better.





  • Step 3


    When finished marinating drain, reserving marinade. Grill chicken over hot coals 10-20 minutes on each side or until chicken is cooked. Baste frequently with reserved marinade during cooking.
