Step 1
Select large boneless skinless chicken breasts. Each chicken breast will make three sandwiches.

Cut each chicken breast in half, across the center. Set the small piece aside. Butterfly the thicker half and then separate completely to make two equal pieces.
Step 3
Beat the two eggs with the milk in a shallow pan. Combine the flour, bread crumbs, peppers and salt in another separate pan.
Step 4
Bread the chicken breasts by coating with the egg mixture, rolling in the bread crumb mixture, re-coating with the egg mixture, and then once again rolling in the bread crumb mixture. The double breading is the key to getting the right texture on the chicken patties.
Step 5
Heat at least three inches of canola oil in a Dutch oven to 350 degrees. Carefully place breaded chicken breasts in the hot oil and cook for three to four minutes per side, or until they are cooked through. Cook only two chicken breasts at a time.
Step 6
Remove chicken breasts to a cooling rack. Do not drain on paper toweling as this will cause the breading to become soggy.
Step 7
Serve spicy chicken patties on hamburger buns with your favorite condiments, lettuce and tomato slices.
Step 8
To freeze leftovers, put the chicken patties on a single layer on a flat baking sheet. Cover with wax or parchment paper. Place in the freezer until frozen. Once frozen, they can be stored in a freezer bag. Frozen patties can be reheated in the microwave or in the oven.
