Step 1
first, you have to roast the chiles. On the stove top on a flat iron skilet, or out on the grill.
After you have roasted the chiles, you will rap them up on a wet kitchen towel to steam them. (this procedure helps loosen the skin for easy removal)
Step 2
Place the flour on a flat plate .
Set aside, when ready to use.
Next, you will make a small slit or cut on your chile.
Note: do not remove the stems, this helps you toss the chiles easier when frying.
Now, you will place a slice of cheese to the inside of the chile. Do this to all the chiles, setting each one aside as you go.
Now, you will need the extra three eggs (whites only) beat them on the bowl until frothy.
Now, add the yolk (for color)
Step 3
Preheat a frying pan with oil on meduim. Mix 3 eggs in a bowl, add salt and pepper.
One by one, you will put a chile stuffed with the cheese on the egg mixture then, you will toss the stuffed chile on the flour. Place each chile aside as you go.
Note: the egg helps the flour to stick to the chile
After you have floured your chiles, dip the floured, stuffed chiles on your fluffed up egg mixture. Then transfer to the heated frying pan.
Fry to a light golden brown.
Step 4
Now place your chile rellenos on plate lined with parchment paper for grease absorbtion.
Serves 4 to 6 people.
Note: you can make as many chile rellenos as you like.
Now serve your chile rellenos with spanish rice and refried beans. Or roll it up on a flour tortilla. Ummm
