Step 1
Make numerous slits into brisket. Insert the sliced garlic and onion in the slits.

Sprinkle with celery salt. Pour liquid smoke on both sides of the brisket.
Step 3
Wrap brisket in heavy duty foil and refrigerate overnight or 8-24 hours.
Step 4
The next day, Preheat oven to 350 F. Unwrap brisket and sprinkle regular salt and pepper to taste.
Step 5
Spray roasting pan with non-stick cooking spray and place brisket in pan
Bake 3 1/2 hours uncovered.
Step 6
Check every 1 1/2 hours and spoon the juices running off the brisket into the roasting pan to keep brisket moist. If brisket appears to be darkening too much, cover with foil.
Step 7
Half hour before removing from the oven, pour off liquid in the roasting pan and cover with barbecue sauce on both sides generously and continue cooking.
Step 8
Slice and serve with rolls and baked beans on the side
