Step 1
Place the chicken breast, crushed garlic, chopped onion, salt, and pepper into a large pot. Fill it with cold water, just until it covers the chicken. Cover and place it on the stove on low.
Step 2
After 1-2 hours the chicken should be done, if not leave it a little while longer. Take the chicken out and allow it to cool. Using two forks shred the chicken.
Step 3
In a large bowl mix 1-2 cups of the mixed frozen vegetables ( make sure to cook the veggies in boiling water for 7-10 minutes ), the shredded chicken, and mayonnaise. With the mayonnaise put as much or as little as you like. It depends on what you like.
Step 4
After it is mixed taste it. Add salt and pepper to your taste. Place the chicken salad in the fridge and leave it overnight.
Step 5
Now you can make sandwiches, tostadas or eat it with some Doritos. I recommend putting some of my oily chili on one slice of bread when you make your sandwich. There you have it a delicious and wallet friendly salad that everyone will love. Enjoy!
