Step 1
Plug in your crock pot and set to Low for about 8 hours.
Step 2
Place your pork loin in the crock pot (you can double up the recipe if you have a lot of mouths to feed)
Step 3
Season with Salt and pepper. Sprinkle liberally with a dry rub - a few tablespoons of Paprika, Onion Powder and just one table spoon of Sugar. Gently rub to cover loin. *Feel free to try different rubs if you like, it's really hard to go wrong here*
Step 4
Pour about a cup of your favorite BBQ sauce over the pork loin. Cover and set to the cook setting.
Step 5
After the loin has cooked for the better part of 8 hours uncover and begin to pull apart the meat with two large forks. The Pork should be extremely tender and fall apart. Add more BBQ sauce to get the pork to the desired "wetness". Put the pork on a sandwich roll or bun and add a slice of cheese if you'd like and that is it!
It doesn't get any easier than that :)

TIPS:
If you'd like you can use a tenderloin, loin or even a pork shoulder. The loins will be very lean and less fatty and you will not have to worry about any fat. The shoulder will be a fattier piece of meat and possibly contain a bone...it will give you more flavor and probably cost a little less but you will have to work a little harder when it comes to the "pulling" stage. Watch for large pieces of fat and bone.
Like Teriyaki?? Use your favorite Teriyaki sauce in place of BBQ (just make sure to leave out the dry rub part).
Frozen pork loin and no time to thaw? Not a problem - Put your pork loin in the crock pot frozen or partially frozen, it will thaw and cook just fine. Make sure not to HEAT UP the crock pot first though, you never want to put cold meat in the hot pot - could cause a crack! I have never been able to notice a difference in tenderness or flavor using a frozen loin versus thawed.
Try a loin that comes already marinated....great flavor and it's even EASIER!
OTHER MEAL SUGGESTIONS:
Try the pulled pork over some rice or add it to a homemade pizza!
Substitute the pork for chicken, same technique.
